Every Night Summer Salad
How is it August? This summer is flying by way too fast. Hermione, Doug, Maddy and I have been having a wonderful time in East Hampton with lots of beach trips, swims in the pool, backyard play and farm stand visits. It's amazing what a difference a year makes. Last August Hermione was much more of a passive beach goer. And now she is all about playing in the sand! Every summer I fully take advantage of all the gorgeous, local, organic farm stand produce available to me in the Hamptons. It's all so fresh and delicious! It really takes little to no effort on my part to turn my farm stand finds into dinner. My most favorite salad to make in the summers is comprised almost entirely (minus the avocado) of farm stand finds. Nothing is more delicious than late summer corn and tomatoes and when mixed together it is pure bliss!
Every Night Summer Salad
- 6-8 small tomatoes or 1 medium
- 1 ear of corn
- 1/2 cucumber
- 1/2 avocado
- sea salt
- If using small tomatoes slice each in half. If using a medium tomato slice into 1" pieces
- Remove corn from the cob
- Chop cucumber into small pieces
- Slice avocado into small cubes
- In a bowl combine sliced tomatoes, avocado, cucumber and corn.
- Toss well to throughly combine
- Add sea salt to taste and enjoy!
This is a salad the whole family can enjoy! Hermione loves it!
