Yam Cookies
Japanese Yams have a dark, almost magenta colored skin and white flesh. They have a unique, creamy taste when baked. I love to make these in large batches and keep them in the refrigerator as a healthy dessert option. They are also great snack to take to the movies in a baggie!
I recently made a batch of these for my best friends wedding. I brought them to her suite, as she was getting ready for the big day. I was so happy I could provide a snack that would fuel her for the walk down the aisle without making her feel bloated or un-bride like.
Yam Cookies
- 3-4 Medium sized Japanese Yams
- Preheat oven to 400
- Slice yams into ¼ in rounds either by hand or on a mandolin.
- Place them in a single layer on a baking sheet and dry roast them for 40-50 minutes flipping halfway through.
That’s it!!! Could not be easier or more delicious!
