Almond Coconut Truffles
Who doesn’t like truffles? They are truly decadent and delicious. Somehow biting into them always makes me feel special-like I’m in Paris in a deep claw foot tub, with a great glass of red wine maybe? This could not be easier. Recently for a party I pre-made a bunch of the base mixture and then let my friends roll their own. It was fun to see all the combinations of topping/coatings they came up with!
Almond Coconut Truffles
- 1 cup almonds
- ½ cup unsweetened cocoa powder
- ½ cup unsweetened coconut flakes
- ¼ cup agave
- 2 T coconut butter
- liquid stevia to taste
- extra cocoa powder for rolling
- extra coconut for rolling
- Process almonds in food processor until finely ground. You can also use a coffee grinder for this.
- Add cocoa powder, coconut, agave, coconut butter and stevia to food processor and combine until smooth and dough like. This can also be done by hand but the mixture may not be as smooth.
- Use hands to form ½” truffles. Roll truffles in the extra coconut and/or cocoa.
- Place in refrigerator to set for about 30 minutes. Store in refrigerator.
