Emergency Chocolate
I received the following email from a girlfriend today: Subject: today is international chocolate day

I am slightly ashamed to report there is currently ZERO dark chocolate in my apartment. I stopped buying dark chocolate bars a few months ago, and have only indulged in them here and there since. However, it being an international holiday I feel like I need to celebrate. This Emergency Chocolate is fast and easy to whip up. With just three ingredients, and a few minutes in the freezer International Chocolate Day may just be saved! I know, I know I could just go out and buy a bar of dark chocolate...but this is so much more fun!
For a variation you can add a sprinkle of sea salt to the mix. Salted dark chocolate = heaven!
Emergency Chocolate
- 2 T coconut oil
- 2 T coco powder
- 5 drops liquid stevia
- Make sure your coconut oil is in it's liquid form. If your jar is solid simply run under hot water to liquify.
- Combine all ingredients in a small bowl. Adjust sweetness to taste.
- Spoon the mixture into baking cups (the silicone kind work great here)
- Place in freezer for 10-15 minutes to solidify.
These are best enjoyed immediately out of the freezer as they will melt quickly! They can be stored in the freezer indefinitely.
